History
As a new immigrant to Montreal in 1919, the young and ambitious Isadore Shlafman set about creating the city's first bagel bakery off Saint Lawrence Boulevard. Thirty years later, unable to meet the growing demand for his delicious bagels out of the current premises, Shlafman purchased a cottage on Fairmount Street and turned the place into a joint bakery/house for himself and his family. Shlafman's son, Jack, soon learned the trade of rolling the bagels by hand and baking them in authentic wood ovens, and joined his father to create the Original Fairmount Bagel Bakery. Today, the business is still run by Isadore Shlafman's descendants, who maintain strict control over the standards that were originally set. |
